Spaghetti Carbonara with bacon and red bell pepper


Jamie Oliver's recipe for fresh egg pasta (4 servings):

Ingredients:
♥ 600 g Tipo 00 flour
♥ 6 large eggs (or 12 yolks)

Method:
♥ Eggs and flour in the food processor. You have the right texture when you have a breadcrumb-like consistency. 
(Alternative option: If you don't have a food processor you can place the flour on a board or in a bowl. Then make a center and add your beaten eggs into it. Mix until everything is combined.)
♥ Knead the pieces of dough together to give you one big, smooth lump of dough
♥ Wrap the dough in cling film and put it in the fridge to rest for at least half an hour - make sure the cling film covers it well to avoid the dough dry out.
♥ Now its time to use your pasta machine if you got one, otherwise use your rolling pin. The pasta must be thin but you have gone to far if you end up having a transparent pasta.
♥ We choose to make Fettucini pasta but you can choose to cut your pasta the wide you like.


Our twist on the classic carbonara (Inspiration from Heston Blumenthal's recipe)
We like to keep it simple but instead of choosing the classic carbonara (egg and bacon/pancetta) we like to add a red bell pepper.

Ingredients:
♥ 100 g Parmesan cheese, grated, plus extra for serving
♥ 6 egg yolks 
♥ Red bell pepper
♥ Bacon

Method:
♥ Mix the grated parmesan cheese and egg yolks. (consistency should be like yogurt, if not add a bit of milk or cream)
♥ Fry the bacon and then bell pepper


Final step - now you have the pasta ready to boil and your filling ready to add just before serving.
♥ Time to cook your pasta. Boil water in a pot and add the pasta for approximately 2-3 minutes (or when it has reached the right consistency - DO NOT LET IT BOIL TO DEATH overcooked pasta does not taste nice!
♥ Drain the pasta but leave a little bit behind in the pot - as it helps to provide a more smooth consistens of the creamy egg and cheese mixture and to prevent a scrambled egg texture
♥ Then add the bacon and bell pepper
Finally you add the egg and cheese mixture and its ready to serve
