SERVES 4 (side dish)
Ingredients:
- 1 small green papaya
- Carrot
- 1/2 cup roasted peanuts
- 3 spring onions
- handful of fresh coriander
- 1 red chili, sliced, seeds removed
- 2 Tbsp. high quality vegetable oil
- 2.5 Tbsp. fish sauce OR soy sauce for vegetarians
- 3 Tbsp. lime juice
- 1/2 to 1 Tbsp. liquid honey
- 1/4 tsp. chili flakes or cayenne pepper
the first 5 ingredients are the main ingredients for the salad but you are welcome to add things such as prawns, basil leaves, green mango, tomato...
the last 5 ingredients are mixed together as a dressing
